Tomato Cucumber Quinoa Salad

Quinoa (keen – wa) is the super grain of the Incas, wheat free, gluten free. Easy to prepare and a complete protein grain – meaning it contains all the essential amino acids. You can use it in place of cous cous. With the weather warming up this is a great summer salad to be served as a side dish or stand alone meal. First lets cook the Quinoa . . .

  • 2 cups of water
  • 1 cup of Quinoa

Bring water to a boil and add Quinoa , stir , reduce heat, cook 10 minutes and cover, remove from heat. When all water is absorbed place Quinoa flat like on a sheet tray and place in freezer to quick cool. Next . . .

  • 2 cucumbers , peeled and sliced
  • 2 tomatoes halved and cut into thin wedges
  • 1/2 red onion thinly sliced

Next we will make the dressing to flavor . . .

  • 1/4 cup of extra virgin olive oil
  • 1/4 cup of red wine vinegar
  • 1 Tbsp of fresh crushed garlic
  • 1 Tbsp of italian seasoning
  • 1 tsp of sugar – optional
  • salt and pepper to taste

Remove Quinoa from freezer after 5 – 6 minutes, place in bowl with dressing and tomatoes, cucumber and red onion , mix well. Let sit so flavors are absorbed and enjoy !
