“The” Tofu Reuben


This is a de-lish gooey treat that is easy to make. Tofu is great because it takes on the other flavors in the recipe. Pair this up with some hand cut french fries and you are golden. We are going to make 2 here . . . this also works well with turkey for those of you who want some meat.

  • 1 package of semi firm tofu
  • 4 slices of rye bread
  • 4 slices of swiss cheese
  • 2 cups of strained sauerkraut
  • 1/2 cup of thousand island dressing
  • some butter for sauteing and toasting

First we want to cut our tofu in 1/2 inch thickness, depending on the tofu you might need two pieces to cover the bread. Then in a mixing bowl we are adding the dressing to the well drained sauerkraut, this is the best part , rolling up your sleeves and getting your hands wet, mix well.

In a large skillet on medium heat we are going to put a little butter, then the 4 pieces of rye bread, 1 slice of swiss cheese per bread. Now in another skillet on medium heat we are adding a little butter to the pan and adding the tofu slabs, browning them and then flipping them to brown the other side. Next we are adding the kraut mix on top of tofu slabs, letting a little fall over the edges, cover with a pizza pan and let them ooze together, after a few minutes , carefully using a spatula/ burger flipper place a slab on 1 of the toasted gooey cheese breads, top with other bread, remove from heat to cutting board slice in half and  D A N G ! the best gooey tofu reuben  . . . Yummy !
