Roasted Broccoli Pesto


I’ve been roasting and toasting alot lately, really brings out the flavor in food. I read this interesting article on cruciferous vegetables and weight loss and decided to put a couple of interesting recipes using them. This pesto can be tossed with pasta , used on a crostini ,or as a sandwich spread. Preheat the oven to 350 . . .

  • 1 – 12 oz. packaged fresh broccoli
  • 2 tbsp of olive oil
  • 3 tbsp of crushed garlic
  • 1 tsp of Italian seasoning
  • pinch of sea salt and pepper

Toss these ingredients and place on a sheet tray. . . roast for 35 minutes. Remove from oven and let cool – or place in freezer to quick cool.

Place broccoli in cuisinart and add

  • 1/4 cup of toasted Almonds
  • 1/4 cup of grated Parmesan cheese
  • 1 tsp of lemon zest
  • 2 tbsp of crushed garlic
  • 1- 1/2 to 2 cups of Extra Virgin Olive Oil – depends how you like it  – runny or firm.

Add everything except Olive Oil , add this slowly to get your desired consistency. Enjoy !
