This recipe is just as wonderful to look at as it is to taste ! Fried eggplant rounds stacked with ripe tomato and mozzarella . . . not the mozz you put on pizza, which is firm, this is the soft melt in your mouth kind – buffalo mozzarella. If your lucky you can find it smoked – which is bonus points for the flavor. Some lemon oregano vinaigrette and garnished with basil chiffonade.  We will team this up with Broccoli Ricotta Pie and makes a wonderful Valentines Day dinner. DANG ! Let’s make the dressing . . . 1/4 cup of extra virgin olive oil, zest a lemon, juice of the lemon, tsp of crushed garlic, tbsp of oregano, 3 tbsp of red wine vinegar, salt and pepper to taste.

  • 1 eggplant peeled and cut into 1/4 inch rounds
  • 1 vine ripe tomato cut into 1/4 inch rounds
  • buffalo mozzarella cut into 1/4 inch rounds
  • lemon oregano vinaigrette
  • basil chiffonade
  • 2 cups of flour
  • 2 cups of bread crumbs – panko would be better
  • 3 eggs beaten
  • 4 cups of canola oil for frying

First we are going to dip the eggplant rounds in flour first ,then egg ,then coat with bread crumbs. Try to keep one hand dry – flour and breadcrumbs – and the other wet – egg – not as messy this way. If you have a fry daddy – great – if not a small pot will do, once oil is hot fry the rounds. When you see the edges getting brown , flip them, remove from oil onto plate with paper towels.

Now we build our stacks, on a plate, place 1 eggplant round, then a slice of tomato, then a slice of mozzarella, eggplant, tomato, mozzarella and again – there is our beautiful stack – now drizzle lemon oregano dressing then top with basil chiffonade.You will probably have some eggplant rounds left over – great on a sandwich or pizza.
