Buffalo Zucchini Sticks


When the “28 Day Veggie Challenge” was initiated, no one considered the fact that the Super Bowl was included in the month of February. So coming up with a Super Bowl menu that satisfied was a big challenge, and I think we nailed it. This is one of three dishes for the big game on Sunday. The fried zucchini sticks will be a tasty substitute for the traditional wings.  If you don’t have a Mandolin Slicer you can cut the zucchini into wedges with a knife. With a mandolin you can either do match stick or regular french fry cut, up to you. Cut ends off of zucchini , try to have them in 3 inches of length when slicing, same if doing wedges.

  • 3 zucchinis sliced on mandolin
  • 2 cups of flour
  • 4 eggs beaten
  • 3 cups of pulsed panko breadcrumbs
  • 4 cups of canola oil for frying
  • 1 cup of Franks Hot Sauce
  • 1/4 stick of soft butter – optional
  • 1 cup of Maries bleu cheese dressing

Using our 1 hand dry , 1 hand wet method, place zucchini in flour first, then egg and then in breadcrumbs. Fry til golden brown, remove from oil to paper towels to soak excess oil. Next the butter is optional in the hot sauce, simply whisk the two together or just use straight hot sauce. Drizzle on zucchini. The bleu cheese dressing is for dipping.
