New Fettucine Alfredo with Broccoli


I can’t take credit for this recipe -found it on a website, tweaked it a little to my liking – and now sharing it with you. Fettucine Alfredo is a delicious but very fattening dish, 1 Tbsp of heavy cream has a whopping 18 grams of fat ! This recipe uses NO heavy cream at all – semi guilt free. To start lets steam 1 head of broccoli florets and cook off 1 pound of fettucine, once these are done we can work on our delicious sauce. For the sauce  we will need . . .

  • 1 small shallot minced
  • 1 Tbsp of chopped garlic
  • 2 tbsp of butter
  • 2 tbsp of extra virgin olive oil
  • 4 tbsp of flour
  • 3 cups of lowfat milk
  • 3 oz. of neufchatel cheese
  • 1/2 cup of grated parmesan cheese
  • 1 tsp of salt
  • 1 tsp of black pepper

First on high heat lets saute garlic and shallot in butter – once shallots brown a little add olive oil and remove from heat. Stir in flour, make sure to mix well – it will get clumpy like –  now add milk , mix well and put back on a medium heat – stirring often so it does not stick.  Now add neufchatel cheese,reduce heat to low, keep stirring, as sauce starts to thicken a little add parmesan cheese, salt and pepper. If sauce gets too thick use a little water to get your desired texture. Toss with your fettucine and broccoli and serve ! Hope you enjoy it !
