Lentil with Turkey Sausage

As much as I like Food Inc. the part where the family of four eats at a fast food restaurant because it’s cheaper than buying groceries – I can’t agree with. They spent $11.60 cents at the fast food joint, I’m going to make 7 meals all coming in around the same price to feed a family of four.This takes a little bit of work on our part, taking the time to check your local grocer like Publix for “BOGO”s – buy one get one free deals. You can either check them out online or look at their weekly flyer that’s available when you first walk in. Also sodas – NO NO NO ! When did soda become an everyday drink? I’ll also show you how to make this delicious,nutritious good for you green tea with mint and sweetened with Stevia – a non caloric sweetener that does not affect blood sugar levels.

These are simple easy to do recipes, that are filling and nutritious . . .This is a good pasta dish, Lets get started . . .

  • 2 cans of Progresso fat free Lentil soup – Progresso runs many specials like 4 for $5 or BOGO.  COST =$4.60
  • 1 link of turkey sausage like Butterball brand, comes 2 to a pack – special is 2 for $4.                     COST =$2.29
  • 1 package of thawed chopped frozen spinach.                                                                                                    COST =$1.19
  • 1/2 box of ditalini or sea shell pasta – all the pasta brands have BOGO periodically                          COST =$1.29

Total cost is $9.37 . . . this is good leaves me $2.23 cents to work on the green tea.

Now to make the meal lets boil water to cook pasta. While we are waiting for water to boil cut sausage into 1/4 inch rounds and in another pot use 1 tbsp of canola oil to saute the sausage. Add 2 cans of lentil soup to sausage, add spinach. When pasta is finished add to soup. If you want you can add grated cheese – very de-lish.

Now you might be saying to yourself “what do I do with the other sausage?” , we will make navy bean soup with it a few days from now. I think this beats fast food any day and you can sit down with your family and enjoy a good meal.

To make the tea you’ll need a quart jug, 8 green tea bags, 2 mint sprigs and 5 stevia leaves. I bought my Stevia plant at Home Depot for $ 2.89 same with the mint. These are easy to grow herbs that are renewable sources. Fill the3 quart jug half way and boil water , meanwhile chop mint and stevia, put all ingredients in jug and add hot water. Let steep for 15 minutes add more water and chill. Green tea is great for the immune system and liver – rids the body of toxins. Mint is awesome for digestion, I think you’ll enjoy it.
